IAOM Latin America District Meets in Lima, Peru

Nearly 60 milling professionals from across Central and South America met at the 37th Annual Latin America District Conference at the Los Delfines Hotel in Lima, Peru.
The 2-day event opened with a pre-conference workshop on Security and Safety at the Mill. Marco Fava, Fava & Saturno Consulting, conducted the workshop.
The technical conference featured technical presentations on topics ranging from heat treatment of flour, dough control fermentation, how to define high-quality baking flour, and the importance of grain moisture in preserving quality.
During the lunch break, attendees participated in a roundtable discussion on HACCP.

The district plans to hold its 38th annual meeting on November 7-8, 2014, in the Dominican Republic. The IAOM technical conference will precede the Latin American Millers’ Association’s (ALIM) annual conference.
